3. Gradually add sugar, one tablespoon at a time, while continuing to beat. Increase speed to high and beat until stiff, glossy peaks form and sugar is completely dissolved (about 5-7 minutes).

4. Add vanilla extract and gel food coloring. Gently fold until color is evenly distributed, being careful not to deflate the meringue.

5. Transfer meringue to a piping bag fitted with a large star tip. Pipe small swirls (about 1-inch diameter) onto prepared baking sheets, spacing them about 1 inch apart.

6. If using, sprinkle decorations over the meringues immediately after piping.

7. Bake for 90 minutes. Turn off the oven and let meringues cool completely inside the oven (about 1 hour) with the door slightly ajar.
