Ingredients
Instructions
Step 1
1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 5-7 minutes until translucent and slightly golden.
Step 2
2. Add minced garlic and grated ginger to the pot. Cook for 1-2 minutes until fragrant, stirring constantly to prevent burning.
Step 3
3. Add chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes until carrots are very tender when pierced with a fork.
Step 4
4. Remove from heat and let cool slightly for 5 minutes. Carefully transfer the soup to a blender in batches or use an immersion blender directly in the pot.
Step 5
5. Blend until completely smooth and creamy. If using a blender, return the soup to the pot.
Step 6
6. In a small bowl, whisk miso paste with 1/4 cup of the warm soup until smooth. Add this mixture back to the pot along with soy sauce, sriracha, and coconut milk.
Step 7
7. Heat gently over medium-low heat for 2-3 minutes, stirring occasionally. Do not boil after adding miso to preserve its probiotic benefits.
Step 8
8. Taste and adjust seasoning with salt and pepper as needed. Add more sriracha if you prefer extra heat.
Step 9
9. Ladle soup into bowls and garnish with chopped green onions and cilantro.
