1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced sausage and cook for 5-6 minutes, stirring occasionally, until browned on both sides. Remove sausage from pan and set aside.

2. In the same pan, add the remaining tablespoon of vegetable oil. Add the diced onion and cook for 2-3 minutes until softened and translucent.

3. Add the minced garlic and red pepper flakes (if using) to the pan. Cook for 30 seconds until fragrant, stirring constantly to prevent burning.

4. Add the sliced bell peppers to the pan and stir-fry for 2-3 minutes until they begin to soften but still retain some crispness.

5. Add the sliced cabbage to the pan and stir-fry for 3-4 minutes until it begins to wilt but still has some texture.

6. Return the cooked sausage to the pan. Pour in the soy sauce and sesame oil, tossing everything together to coat evenly.

7. Continue cooking for 1-2 minutes until everything is heated through and well combined.

8. Remove from heat and garnish with sliced green onions and sesame seeds before serving.

Chef's Notes
For the best texture, slice the cabbage thinly and don't overcook it - you want it to retain some crunch
If using Italian sausage, you can remove it from the casing and crumble it for more even distribution throughout the dish
Let the pan get hot before adding ingredients to achieve proper stir-fry caramelization
