Instructions
Step 1
1. Cook the Lo Mein noodles according to package directions until al dente. Drain and rinse under cold water to stop cooking, then set aside.
Step 2
2. Heat peanut oil in a large skillet or wok over medium-high heat. Add ground pork and cook, breaking it up with a spatula, until no longer pink and lightly browned, about 5-6 minutes.
Step 3
3. Add minced garlic and grated ginger to the pork. Cook for 1-2 minutes until fragrant, stirring constantly to prevent burning.
Step 4
4. Pour in the chicken broth, mirin, dark soy sauce, sesame oil, and sriracha. Stir to combine and bring to a gentle simmer.
Step 5
5. Add the coleslaw mix to the skillet and cook for 2-3 minutes until the vegetables begin to wilt but still maintain some crunch.
Step 6
6. Add the cooked noodles to the skillet and toss everything together using tongs until the noodles are evenly coated with the sauce and heated through, about 2-3 minutes.
Step 7
7. Remove from heat and stir in 1/4 cup of sliced green onions.
Step 8
8. Divide among four bowls and garnish with remaining 2 tablespoons of green onions and optional sesame seeds.
