Ingredients
Instructions
Step 1
1. Place the corned beef brisket in a large Dutch oven or heavy pot. Add the spice packet, water, quartered onion, smashed garlic, black peppercorns, and bay leaves.
Step 2
2. Bring the pot to a boil over high heat, then reduce to low and cover. Simmer gently for 2 1/2 hours, skimming any foam that rises to the top.
Step 3
3. After 2 1/2 hours, add the potato chunks and carrot pieces. Continue simmering, covered, for another 30 minutes or until the vegetables are nearly tender.
Step 4
4. Add the cabbage wedges on top of the meat and vegetables. Cover and cook for an additional 15–20 minutes, or until the cabbage is tender but still vibrant.
Step 5
5. Remove the corned beef from the pot and let it rest on a cutting board for 10 minutes before slicing against the grain.
Step 6
6. Arrange the sliced corned beef on a platter with the vegetables. Ladle a bit of the cooking broth over the top for extra flavor. Garnish with fresh parsley or serve with mustard on the side.
