1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal.

3. Press the crust mixture evenly into the bottom of the prepared pan. Use the bottom of a measuring cup to compact it firmly. Bake for 18–20 minutes, or until lightly golden around the edges.

4. While the crust bakes, prepare the filling: In a large bowl, whisk together the lemon juice, granulated sugar, eggs, and flour until smooth and well combined.

5. When the crust is done, remove it from the oven and reduce the temperature to 325°F (160°C). Pour the lemon filling over the hot crust.

6. Bake for 20–25 minutes, or until the filling is set and no longer jiggles in the center when you gently shake the pan.

7. Cool completely in the pan on a wire rack, then refrigerate for at least 2 hours to allow the bars to firm up.
