1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Season chicken pieces with 1 teaspoon Italian seasoning, salt, and pepper. Add chicken to the pot and cook until golden brown on all sides, about 5-6 minutes. Remove chicken and set aside.

3. Sprinkle flour over the vegetables and stir continuously for 1-2 minutes to cook out the raw flour taste. Add tomato paste if using and stir to combine.

4. Gradually pour in chicken broth while stirring to prevent lumps from forming. Add remaining 1 teaspoon Italian seasoning and bring to a simmer.

5. Add pasta and cooked chicken to the pot. Reduce heat to medium-low and simmer for 10-12 minutes until pasta is al dente and chicken is cooked through.

6. Reduce heat to low and stir in heavy cream and parmesan cheese. Cook for 2-3 minutes until cheese melts and soup is heated through. Add spinach and stir until wilted, about 1-2 minutes.
