Step 1
1. Brown the Beef: Heat coconut oil in a skillet over medium-high. Sear beef in batches for 2-3 minutes per side until lightly browned (not fully cooked). Transfer to crockpot.
Step 2
2. Sauté Aromatics: In the same skillet, sauté onions for 3 minutes until translucent. Add garlic and cook 1 minute until fragrant. Scrape mixture into crockpot.
Step 3
3. Layer Vegetables: Add carrots, celery, turmeric, and salt to the crockpot. Pour bone broth over ingredients.
Step 4
4. Slow Cook: Cover and cook on LOW for 7 hours or HIGH for 4 hours, until beef shreds easily with a fork.
Step 5
5. Serve: Discard bay leaf (if using). Ladle stew into bowls, skimming excess fat from the surface if desired.

Chef's Notes
For deeper flavor, brown the beef in batches without overcrowding the pan.
Fresh turmeric (1 tbsp grated) can replace ground turmeric for brighter color.
Let stew rest 10 minutes after cooking to allow flavors to meld.
Serving Suggestions
Serve over cauliflower rice or with a side of steamed greens. Ideal for chilly days or as a make-ahead lunch.
